Excellent for larger shreds/curls of parmesan or chocolateMay 07, 2006
By Amalfi Coast Girl This microplane is used primarily for Parmesan and Chocolate in my kitchen.
If you are making a salad, or finishing a cold vegetable dish the standard microplane makes cheese shreds that are very fine, in my opinion too fine. I prefer to have a larger size shred on my cold dishes. This grater is perfect for that application.
For cold chocolate desserts this tool is also very handy. I like to have larger pieces of chocolate shavings on the top of my cold chocolate desserts (tiramisu and chocolate mousse). When you warm the edge of the large chocolate bar with the palm of your hand for 10 to 15 seconds this tool gives a nice size curl of chocolate.
If you find the fine shreds from a standard microplane too small for some applications give this tool a try. It doesn't get used every day in my kitchen, but when I need it, I am glad it is available. I highly recommend this tool to people that are concerned about presentation.

Good, but dangerousMar 30, 2007
By R. Brome Like all Microplane graters, this one is great. In my experience, it produces about the same results as the coarse model, so I'm not sure about the "medium" label, but it works quite well.
You have to be extra-careful when using this one, though. Because the blades are so sharp, it grates so fast, and you are applying pressure in both directions, it is easy to hurt yourself. I inadvertently trimmed a fingernail the first time I used it. I was impressed that the sharp blades went through my fingernail like butter, but it wasn't really a good thing. Had the angle been a little different, it would have been the tip of my finger and a some blood mixed in with my grated cheese.
Since the results are so similar, I would recommend using the safer "coarse" model instead.

Very easy to use, no knuckle grating, I can grate directly onto the food exactly where I want it, cleans up easily, and it works equally well for very soft cheese or rock hard cheese. As it states it really does work in both directions. Because of microplane grater I bought two others for myself and a few as gifts.

By J. Pelka For years I was constantly grabbing the fine ribbon zester and thought I'd try the medium and coarse graters too. I use all of them constantly. The two-way grate on this one is fantastic! I highly recommend all three.
