5Every kitchen needs a microplaneJan 19, 2008

I bought the extra course microplane for my wife, who is an avid cook. She had already owned the fine microplane for a couple years and we used that one so much that it seems to be in every dishwasher load! As the kitchen assistant, I use both microplanes often, so here is a summary of why I think they are such grate (ha!) products:

Microplanes in general:
-Ergonomically designed: It's a lightweight tool with a solid plastic handle, which makes it very easy to position in space above the receiving vessel, whether that's a prepared plate or an empty bowl. I find that a standard flat or box grater needs to be rested against a surface in order to grate properly, making the process more complicated and difficult.
-Efficient grating surface: The grating surface has sharp and closely spaced holes, making grating a very efficient process. In fact, I sometimes keep the food stationary and run the microplane back and forth, which is possible due to the sharpness of the blades. Compared to a box grater or normal flat grater, I find that much less energy is needed to grate something - shouldn't that be the goal?
-Safety: Ever grated a portion of your finger along with the food? Yeah, me too. Because the microplane is easier to control, the risk of this is much lower.
-Control of grated food: The microplane grating surface has curved edges, which help to "funnel" the grated food towards the target. Combined with it's small width, this makes it very easy to grate directly onto a plated dish before serving with no mess, rather than first into an intermediate bowl.
-Small profile, easy storage: The included sliding cover protects against scraped knuckles while sorting through a drawer and makes safe storage easy. Because of the small profile of the tool, it easily fits in a kitchen drawer or a tool canister.

Coarse microplane in specific:
-The fine microplane is a great tool for zesting fruit or to grind up a whole nutmeg or cinnamon stick. However, unless you like cheese dust, its not ideal for cheese.
-The coarse microplane is perfect for hard cheeses. I use it often on a block of parmesan reggiano for salads and pasta.
-For soft cheeses, the coarse microplane *might* not be the best choice. Because the microplane surface area and holes are smaller compared to the large holed side of a box grater, it may take less time to grate an entire block of mozzarella with the big-hole side of a normal box grater. However, the microplane is much easier to use, so it's a close comparison.

Overall, the microplane is a value-added modernization of the traditional grater. With its efficient size and ease-of-use, it's a great value for the price and definitely not a uni-tasker. I would recommend it to anyone who spends a lot of time in the kitchen - you won't be disappointed!

This is a good grater it is not as good as the 40020 grater, though I think if I had not had the 40020 first I would have given this a better rating since I would not know just how well a grater could work.

I use this for my soft cheeses such a jack and Cheddar.

This is my all-time favorite microplane. It stays razor sharp, and it delivers thin, long, wonderful layers of cheese. There is little better than eating a steaming plate of spaghetti topped with melting *ribbons* of cheese (vs little powdery dustings.) Highly recommend.

This grater does an excellent job for an excellent price. It's lightly built, esp the cheap plastic handle, but not flimsy and it holds up well. It can be a little tricky to clean because of the grate design, but that's not unusual with graters. Fantastic upgrade over my previous grater; perfect for cheese. Highly recommended.

This is a great grater!!!!! I wanted one that would do little larger than fine grating. This does the trick; and it is easy to clean in dishwasher or by hand. I highly recommend it. Price is outstanding!
