By Jordan H. Lord This chefs knife has served as a replacement for my henckels for five years now. Five years of hard work in numerous high volume kitchens. The spine is smoothed over to prevent serious cooks calus, and since the bolster does not extend all the way down to the edge its easy to sharpen the whole length of the blade. No bowing, no grinding. Also the blade is ground at a steeper angle than most german knives resulting in a sharper (altough more fragile) edge. I find the balance perfect for me if youre looking for something more blade heavy try japanese style knives, more handle heavy get a Dick or a henckels cermax. Also stick with a fine cut steel for this knife.

I never owned a forged kitchen knife before. These are my first. After researching all the forged knives on my list, I finally decided on the Messermeister Merdian Elite. This model has the Classic handle. These knives are awesome. I've been using them daily for the last 2 months and they still haven't seen a steel. Super sharp right out of the box. Like German quality? What more knife for your money? Then you can't go wrong with these.

I bought this knife as a gift because I have used one just like it for years and its my favorite kitchen implement. Its very sturdy and holds its edge well despite all my abuse :-) This brand isn't one of the better known ones but it really should be as its quality is excellent!

By J. B. Erickson Great knife, feels good in the hand with a great weight to it (just right, not too heavy and certainly not too light as so many knives on the market seem to be). I have the 6" version, although to do it over, I'd get the 8" version. Blade has remained relatively sharp. In 3 years, I've had it sharpened only once. The only reason for a star knock-down to four from five is that the blade seems a bit fragile. I've got a pretty good nick near the top with a small indent in the blade itself. In comparison, the Chicago Cutlery 8" chefs knife I've got (handed down from my grandmother) isn't nearly as fragile of a blade and has lasted for over 30 years. All in all, a GREAT knife, especially for the price point.

...and this is a great knife. The balance is perfect for my hand and the angle of the edge and its keenness make kitchen work safe and fast. Highly recommended, but use a good steel before and after every use and protect that edge! You can use a knife block, hang it from a magnet, or use a commercial edge protector, or make your own from some cardboard and tape. I highly recommend this knife for people who love to cook because it just adds to the joy.
