My new favorite knife!Jan 11, 2009
By S. Ciacci I love this knife!!! I have searched so long for a knife that would allow me to clean my chicken the way i want. I hate thick chicken and when i clean it its important that i can cut it as thin as possible. It cut my cleaning time by at least 20 minutes(i clean a big family pack at a time). I knew a filleting knife would be the best bet but everywhere i looked they were over $100. You cannot go wrong with this price and this model. I bought this from a third party (not amazon) and i do have to complain about the packaging, the plastic was all cut but i wasnt going to complain because there was no way you could get the knife out so i know it wasnt used. Other than that i HIGHLY recommend getting.

By wes Works really well, flexes like it needs too and seem to stay real sharp.I have not had to sharpen it yet.

By Shawn Whaley If you're looking for a great fillet knife in the sub $80 price range, this is it. I consider this to be every-day kitchen quality but not quite restaurant quality. If you fillet chicken more than 3 hours a day, then I doubt you're considering this knife anyway.
It is very sharp and has a good flex for de-boning small game.
The only possible negative I want to draw attention to is this: the cutting edge continues to the point where the blade meats the handle. So, if you have a high grip you may lose some skin on your fore-fingers. In other words, get used to gripping this knife directly on the handle instead of choking up on it.
