Marvelous knife!!! Well worth the money. Extremely sharp and well balanced. If you have a larger hand this will fit your hand well. I had this in a different style handle, the classic grip and exchanged it for this handle style.

I cannot say enough about this knife! I use it far more than my classic chef's knife. It takes just a few minutes of getting used to how it handles. It can be 'rocked' like a chef's knife, just not quite the same way. Once you get used to this you'll love it. It cuts very cleanly and smoothly. Treat it properly and it will last a lifetime.

A well made knife is an essential cook's tool. And this in my book is one of the best made out there.

My wife and I cooks alot and we have been searching a 'perfect' all rounded knife; We found it THE PEFECT knife! We replaced our entire 9-piece knives set with this line of Henkels

- Henkels 7" Hollow-Edge Santoku

- Henkels 5" Hollow-edge Santoku

- 4" Parer

- Bread knife

Pros:

Sharp, sturdy and precise. No more eeky food stain and crumps get in between the handle and the blade.

Cons:

It takes a while to get used the 50/50 blade and handle weight distribution but once you get used it, makes other models or make obselete.

love the blade. the handle, not so much. got the 2 knife set about a year ago (this one w/ the paring knife.) the blades are great, super sharp and cut well. however the handles on both knives cracked in several places after only a few months of TLC care. (hand washing only, handled carefully). I love henkel knives and have used them for years, I will just get them with a different kind of handle in the future. also with this particular model it took me a few weeks to get used to the handle-heavy balance.

4A Few Drawbacks But One of My Most-Used KnivesJan 19, 2012

I have, and had previously, quite a few Henckels, Wusthof and Shun knives. This Twin Cuisine Santoku remains one of my most-used knives, close to a decade after purchase. The blade is sturdy, comes sharp and is easy to keep sharp on your own (I use a Chef's Choice 130), unlike some of the more delicate Japanese blades. The Santoku design does seem to work to resist drag and I like the broadness better than a standard chef's knife. The handle fits comfortably in your hand and the length of the blade is also ideal for most tasks, which is why I reach for this knife quite frequently. (Until recently, I'd say it was my most-used blade.)

Now for the negatives, the Twin Cuisine handle design is heavy and can be slippery with wet hands. Also,over time, the ebonized wood that surrounds the stainless steel in this handle is subject to crazing with repeat washings, even if done by hand.

But the biggest downside is that the weight of this handle, which makes the knife feel heavier than I'd like and not fully well-balanced. It's something I get to used to relatively quickly with use, but I'm always surprised at the heft when I pick it up after using my lighter Shun or other Five-Star Henckels knives for a while.

I've got quite a few of those Twin Cuisine Henckel blades and the slippery and heavy handles are the biggest drawback on them all.

While this is no longer my most-loved/used knife (this one is my current fav: Shun Classic 7 1/2 Inch Wide Santoku), I have nothing but praise for Henckels hardware (still the most common brand in my knife drawer) and the company itself. On the few occasions I have needed to have warranty service or replacement, Henckels has been incredibly easy to deal with and has always gone above and beyond in terms of customer satisfaction. Can't say enough good things about the service level, which seems rare nowadays.

I bought this as a birthday present and have to say it is an amazing knife. I've always been a huge fan of hollow-edge santoku knifes, I use them for pretty much everything. This one is made in Germany (I believe all of the Zwilling knifes are, but the regular J.A. Henckels are made in China... which I have used a few of the nicer ones and they are not bad knifes either, just not quite as balanced as the Twin line).

I really like the ergonomics and balance of the Twin Cuisine line, and I like the stamped end on it. I also like the Twin Star II line, it's a toss up really. You can cut effortlessly with these knives (between how sharp they are (and stay!), the balance and the 'hollow' channels prevent what you are cutting from sticking to the knife).
