The Best Knives I've ever ownedJan 21, 2007
By J. Goekler The knife set is absolutely fantastic! The knives are razor sharps, feel great in the hand, and ring like a tuning fork when sharpened. They look, feel and cut like quality. They hold an edge far longer than I expected, staying sharp for weeks between honing on the sharpening steel. They are a little heavy in the hand, but very well balanced. I highly recommend them. The best knives I've ever owned.

I've had these knives 3 months now and use it daily as I cook a lot at home. They are very sharp and quite heavy though well balanced. Someone with a smaller hand or less beefy arms might find them a tad too big and heavy and might want to look at Global knives. However, these have been great for me and the missus making light work of cutting roast, vegetable etc. A sharp set of knives is a must and these will last a lifetime.

Great set for the essentials!Dec 05, 2008
By hiero I picked up a santoku twin select blade along with this set and I have to say, it takes care of almost 95% of the kitchen duties that I have needed thus far! I much prefer the full metal handle of the twin select line, but since these have the same shape, it's really still quite natural to hold the knife either full on the handle, or choked up with fingers on the back of the blade for chopping and other detailed cutting tasks. The sharpening steel is a nice bonus too! Great heft (you don't really lose much heft compared to the all metal twin select line) and very much a fantastic-use-it-everyday kind of knives!

Cracked HandlesApr 12, 2011
By Patrick A note of warning to all those that have bought the Twin Cuisine.
I purchased multiple knives from various vendors three years ago to make a complete Chefs Set.
First Henckel makes a great product, as long as you buy there upper end line that is made in Germany.
When I purchased the Twin Cuisine line I went to various restuarant suppliers I work with and tried out varies knives for feel. I have to say that the Twin Cuisine had the overall best fit for my larger hands. The weight was there and over course the Henckel name.
Last winter I was taking some time to stone sharpen all the knives and I noticed cracking on the plastic molded handles. Not just one knife but every single knife. From Steak to Carving. Every single handle had cracks in them. After researching this on the net, it looks as if the Twin Cuisines all have this problem after a couple of years.
I have yet to send them back to Henckel because they informed me it can take up to 12 weeks for them to warranty them. (I guess they send them back to Germany vie a boat and then mule express, so I have not taken the time to do it as I need the knives professionally)

I finally asked a friend of mine who is very knowledgeable about knives and kitchen products in general to help me out! J.A. Henckels is one of two of the TOP rated knife makers. I absolutely love these knives. The handles are weighted, they balance perfectly and cut like you wouldn't believe. I've had my set for a few months now and I still love using them. I highly suggest that you find a retailer that sells the knives so you can see how they fit your hand. I held an array of knives and these were the ones for me. It took some time and research but completely worth the investment. Amazon had the best prices around on them too! Take good care of them (NO DISHWASHERS! Hand wash and dry after use) and they will last a life time. Happy Cooking!
