I love this little knifeNov 06, 2009
By prolific reader I bought this knife a year-and-a-half ago, along with the big 9-inch chef's knife. I love both of these knives. They are both light and extremely sharp. While these knife is small, and is best used on small cutting tasks, it is perfect for these small tasks. It's so light that it feels like a toy knife, but it's so sharp that it's extremely effective. It makes cooking fun -- what more can you ask?
For a small woman, it's a very useful knife that can be used for most kitchen tasks that a large guy would use a chef's knife for. Only large cutting tasks are beyond this little knife.

By K. Beam I'm 62 and have worked in the restaurant/hotel business since I graduated from college, so I know a little about high quality chef knifes. To date I can emphatically state that I've never owned a sharper knife, that stays that way with just a light touch up with a quality steel.
I own 4 of these knifes which are used daily as steak knives and prep knives. There a tad on the expensive side, although I did score what I considered a deal on eBay.
Anyway, if you're looking for a really, and I mean really, sharp prep/steak knife that doesn't require much routine sharpening you've found it.

By Pickelw Pro: These knives are so sharp that I really, really am cautious when using them. The Cermax line are as sharp as scapels. Make sure that you need a knife this sharp in your kitchen. If you have little ones in the house I would not have it out where they can get to it. They re really that sharp.
It will slice a tomato with little or no pressure. You have to be aware that the knife has gone through the tomato if you are holding it to slice it or you will go right into your hand.
If you do a lot of cooking and need a very, very sharp knife, the Cermax is the knife you need.
Con: These knifes are Not dishwasher safe. it is marked right on the box. I do not think I would put something this sharp in the silverware basket anyway. Much too dangerous!
