By E. Reynolds Not only do you get a useful 2-qt pan, but the porcelain insert can be used separately in the oven (not stove top)--although I'm not sure why you'd want to. The insert is thick and heavy and (most important) is smooth inside with no ridges; the support is a stainless steel band on the outside. The insert is big enough to accommodate most pudding/custard recipes. True, the insert is made in China for All-Clad, but the quality appears to be up to snuff.

By chef don This is the ultimate double boiler and should be included in the arsenal for all serious chefs. Its on the heavy side with the porcelain insert and although this insert needs to be handled with some care,it is a fine addition to any kitchen.
